Until recently, Shropshire Blue had never been made in Shropshire. It started out as a Scottish attempt to replicate Stilton cheese, but with the subtle twist of adding annatto to the milk to give it that stunning orange hue.
Shropshire Blue has all the qualities of a good, creamy Stilton. Flavours are rich and slightly spicy, with a lingering finish and a savoury sweetness.
