-Raw Sheep's milk -
Manchego is produced exclusively with high-quality milk from the Manchega breed of sheep. This cheese has a floral aroma with a gentle, nutty flavour. Its semi-firm paste has a rich golden colour and smooth texture.
The 12-Month Manchego is made in strict adherence to the traditional process, and is certified PDO (Protected Designation of Origin). Using no preservatives on the rind, this all-natural cheese is hand moulded with herringbone prints, to mimic the traditional look when cheese curds were pressed with a straw cheese belt.
