- Cow's milk -
Petit Munster is a washed rind cheese, made from pasteurized cow's milk. Produced by Maison Haxaire, the aroma of Munster is quite pungent. (Stinky cheese lovers, step this way!)
After production, cheeses are matured for 3 weeks. They're washed washed with a brine solution that stimulates the growth of the Bacterium Linens mold - the culture that gives the cheese its sticky, orange-pink rind and pungent aroma.
The interior paste is white, smooth, rich and velvety, becoming yielding and unctuous with age. The flavour of the cheese is much milder than the smell would suggest. Flavours are very clean and lactic, with notes of fruit and straw.
