St. Nectaire is a French semisoft, washed rind cheese from the Auvergne region of France.
The appearance of the rind of Saint Nectaire can be very different according to its level of maturity. It is always irregular and never all the same colour. It can show white, brown or gray spots on a pinkish-orange base. Its paste is of a shiny, creamy colour that can sometimes reveal round fermentation holes.
At maturity the thick rind gives off a subtle, slightly pungent smell of rye straw and mushroom. The pâte should have a pronounced taste of nut, milk and the lush pasture, lands of its origin.
