Named after the town of Beaufort, in the French Alps, this cheese is one of the finest Alpine cheeses produced in the world and mostly unknown in Australia.
Beaufort d'Alpage is the smallest production of all Beaufort and is made exclusively from early June to end of September using milk from a single herd that has been feeding on sustainable mountain pastures over 1,500m high. The pate is a creamy, pale gold colour, smooth in texture, but as it ages cracks appear, ripening the cheese. The flavours are lovely – with an almost sweet almond nuttiness, the taste is never abrasive on the tongue, even when the cheese is aged.
