- Raw Sheep's milk -
Ossau Iraty is a beautiful, quality cheese from milk to maturation. Surrounded by mountains and pastures, the sheep are mainly fed with pasture and non-GM cereals from Béarn and the Basque Country. The cheese is then matured for a minimum of 80 to 120 days. To the delight of gourmets, its taste asserts itself with age: an Ossau-iraty of 6 or 8 months can be considered at its optimum. The aromas are well-present and varied, and the texture soft to firm, without being either sticky or dry. The taste of Ossau-Iraty is delicately sheep, with a hint of hazelnuts.
